Affiliate Fatblogging, Episode 8

Today I am going to talk a little bit about the food I’ve been consuming on the Weight Watchers core plan while Affiliate Fatblogging.

In the past, I enjoyed all of the bad stuff a bit too often - pizza, cheese steaks, fried chicken, White Castle sliders, etc.

But I’ve found some discipline and I’ll share what I have on a typical day.

Breakfast: Shredded wheat with sliced bananas or maybe a yogurt and piece of fruit.
Snack: Piece of fruit.
Lunch: Big salad with some protein: eggs or chicken or some soup, either home-made or those listed in the Weight Watchers core plan (lots from Progresso to choose).
Snack: Big bowl of fruit salad.
Dinner: Baked chicken with vegetables.
Dessert: Fat free and sugar free jello with low fat whipped cream.

One thing I like to cook from time to time is a big pot of chili, and I’ll share my recipe with you. I make the Affiliate Fatblogging Chili with lean ground beef, ground turkey or chicken.

Buy these ingredients and follow the easy directions and you’ve got a tasty pot of chili in the kitchen, and plenty of extra to freeze.

You can cook it up in less than two hours, but I like to simmer it for three or four hours for the perfect consistency and flavor.

Ingredients

  • Two pounds of lean ground beef, turkey, or chicken
  • Two cans of crushed tomatoes - each can should be 28 oz. or so
  • One can of whole tomatoes - 28 oz. or so
  • Two cloves of garlic
  • Two cans of kidney beans - each can should be 16 oz. or so
  • Two red onions - each about the size of your fist
  • Two cans of tomato paste - 6 oz.
  • Two cups of reduced fat cheddar cheese
  • One cup of vinegar
  • One squeeze of mustard
  • A couple shakes of each of any spices in your cabinet (some of mine are Old Bay Seasoning, crushed red pepper, oregano, sweet basil, and chili powder)
  • A bunch of shakes of hot sauce
  • A can or two of your favorite beer

Let’s Get Started

You’ll need a large frying pan and a stockpot.

  • Brown the meat in a frying pan and drain
  • Add in spices with meat and cook together
  • Put canned tomatoes and tomato paste in big pot
  • Drain beans and add to big pot
  • Cut up the onion and garlic and add to the tomatoes and beans
  • Mix meat in with the other stuff in the big pot
  • Simmer for a while and as the liquid boils off, pour in some beer to obtain the consistency you want
  • Add vinegar, mustard and various spices as you cook to suit your taste
  • When you’re about ten minutes from the consistency you prefer, dump in the cheddar cheese and mix around well - it will melt and give the chili a nice, fiery color
  • Don’t forget to taste it a lot as you cook and modify the taste with spices as much as you like

Serve It Up
It goes great with fresh garlic bread or corn bread, but keep it to one serving, my diet friend. You can freeze the leftovers and microwave them a month later and it still tastes great.

But let it thaw by itself, because it you microwave it frozen, the middle will stay frozen. In addition to tasting great by itself, the chili also makes a tasty topping for pasta. Enjoy!

And yes, you could be chef -like and make it all from scratch with soaking beans, chopping tomatoes, etc. If you have time for that routine and enjoy it, rock on.

    Good job Shawn 11lbs! I’m The Same weight 216 now I’m down to 209 my goal is 185 ,But people need to get that word out of their heads and that word is Diet Bad word.
    Just say change of habits thats it,Yes don’t stop eating just change what you eat.So if you don’t want to end up like me with heart disease and
    Diabetes Lose some weight.

    Try frying the onions and garlic with the beef.
    It will bring out more flavor.
